  • Taco Salad ala Tracy

    Ingredients

    1/2 cup seasoned organic ground beef
    2 fluffy cups mixed greens
    1 tomato
    1/2 orange pepper
    8 sliced blk olives
    Pico de gallo
    Fresh hot salsa
    1/4 avocado

    Directions

    1. Brown the beef
    2. Distribute over mixed greens & top with tomato, pepper, salsa, sliced olives & avocado

  • Tracy’s Paleo Egg Salad

    Ingredients

    2 hard boiled eggs
    1/2 avocado
    2 strips bacon
    3-4 heirloom cherry tomatoes

    Directions

    once you mash the avocado & eggs together …you know, somethings don’t need further directions!

  • Tracy’s Paleo Crock Pot Brisket Tacos

    From our own Tracy Olund’s tried & tested recipes, here’s something that makes my mouth water just looking at the photo! Plus you’ve gotta love that it’s a crock pot meal, meaning it’s ready when you get home from work – doesn’t get much easier than that.

    Ingredients

    3-5 lbs brisket/ chuck shoulder roast
    1 onion rough cut
    6-8 garlic cloves
    2 cups L.S. beef broth
    1 sm red cabbage
    Salt (optional)

    (no measurement on spices smell as go is Tracy’s advice)

    Cumin
    Coriander    
    Turmeric
    Cayenne pepper
    Cilantro

    .

    Directions:

    1. Cook in crock pot on low 8-10 hours.
    2. Use leaf from red cabbage as a taco shell
    3. BBQ peppers to place on top of your taco along with avocado.
    4. Top taco with Avocado, cilantro and salsa
